THE MENU BURGER
This recipe is inspired by the burger they make in the movie The Menu and is hands down the best burger you can make. As Ralph Fiennes put it, “I'll make you feel as if you're eating the first cheeseburger you ever ate. The cheap one your parents could barely afford.”

Ingredients:
The Sauce
¼ cup mayo
2 tbsp ketchup
1 tbsp pickle juice
5 pickle slices, chopped (I prefer bread and butter pickles)
¼ tsp garlic powder
¼ tsp smoked or regular paprika
Salt & pepper to taste
The Burger
1 lb 80/20 ground beef
4 sesame seed buns
4 slices of American cheese
2 tbsp of ghee (or butter)
8 pickle slices
¼ onion, thinly sliced
Salt & pepper for seasoning
Parchment paper
Directions:
In a small bowl, mix together the mayo, ketchup, chopped pickles, pickle juice, garlic powder, paprika, salt and pepper. Set aside.
Roll your burger meat into 3oz round balls. Try not to over handle. Chop your onion into thin slices and set aside.
Heat a grill or skillet over medium-high heat. Once hot, melt the ghee or butter in your pan and toast your buns. You should toast each bun for about 2-3 minutes or until golden brown. Set aside.
Once your buns are toasted, wipe your pan and turn the heat to high. You want your pan VERY hot. You can test it by flicking water and seeing if the droplets bead up and glide across the skillet.
Place one of your ground meatballs on the pan (no oil needed), top with a piece of parchment paper, and press down with a strong spatula. You want your patty to be about ½ in thick and then remove the parchment paper right away (this helps the meat not stick to your spatula). Season the raw side of your burger with salt and pepper and add your onion to the top. Cook for about 2-3 minutes or until it starts to brown and get crispy.
Flip your patty and immediately add two slices of American cheese.
Repeat with the remaining burger patties.
Once your patties are cooked, assemble your burgers. Place 4 pickle slices on your bottom bun, top with 2 of your cooked burger patties, add your sauce, top bun, and enjoy!
