SPIRAL CUCUMBER SALAD
This crunchy cucumber salad is so fun and easy to make, and it’s absolutely delicious.

Ingredients:
6 mini cucumbers
1 - 2 tsp minced garlic
2 tsp sesame seeds
3 tsp soy sauce
3 tsp rice wine vinegar (or apple cider vinegar)
3 tsp brown sugar
1 tsp sesame oil
Red pepper flakes or crunchy chili sauce (Optional)
Directions:
To make cucumber spirals, place cucumbers between 2 chopsticks. Keep the sticks tight to the cucumber to prevent you from cutting all the way through. Cut one side of the cucumber into slices at a 45° angle. Then flip and slice at a 90° angle.
In a mixing bowl, add all of your dressing ingredients.
Place your cucumber spirals in a serving bowl and coat with dressing (you can also mix the cucumbers in the dressing and let marinate in the fridge for 30-60 minutes).
Serve and enjoy! Option to top with Momofuku Chili Crunch (if you like spicy)
